Pao Bhaji Burgers by Zubaida Tariq in Handi

PAO BHAJI BURGERS
Ingredients:
Bun 6
Boiled potatoes 3
Peas ½ cup
Cauliflower 1 small
Carrot (grated) 1
Green chilies (chopped) 4
Mustard seeds 1 tbsp
Salt to taste
Red chili flakes 1 tbsp
Black pepper (crushed) 1 tbsp
Cumin seeds (roasted and crushed) 1 tsp
Lemons 3
Mint leaves 1 bunch
White vinegar 2 tbsp
Oil 2 tbsp
For stuffing in buns
Chili Sauce 2 tbsp
Butter 1 small packet
Warm milk ½ cup
Method:
Peel the boiled potatoes and cut them in cubes. Take 1 small cauliflower, grated carrot, ½ cup peas along with 2 tbsp vinegar and salt in a pan. Steam them for some time till the water in the pan dries. Mash the potatoes and add the vegetables in it. Add in 1 tbsp crushed black pepper, 1 tbsp red chili flakes, lemon juice, salt, 1 tbsp mustard powder, chopped green chilies, 1 bunch of mint leaves and 1 tsp roasted and crushed cumin seeds. Mix everything together. Now take2 tbsp oil in the pan and add the potato mixture. Stir fry it. Grease the pan and lightly toast the buns. Now put some hot milk on the buns. Mix 1 small packet of butter with 2 tbsp chili sauce and spread it on the buns and the finally spread the vegetable mixture on the buns. Cover the other side of the bun and serve.
