Pasta Pomodoro
Ingredients
2 cups Angel hair pasta
1/4 cup Olive oil
1 Onion, chopped
4 cloves Garlic, minced
2 cups Tomatoes, diced
2 tbsp Balsamic vinegar
1 cup Chicken stock
1 tsp crushed Red chilies
1 tsp Freshly ground black pepper
2 tbsp Chopped fresh basil
1/4 cup Grated Parmesan cheese
Directions:
First of all bring a large pot of lightly salted water to a boil. Add pasta and cook
for 8 minutes or until al dente; drain. Pour olive oil in a pan. Sauté
onions and garlic until lightly browned. Reduce heat add tomatoes,
vinegar and chicken stock; simmer for about 8 minutes. Stir in red
chilies crushed, black pepper, basil and cooked pasta, tossing
thoroughly with sauce. Simmer for about 5 more minutes and serve topped
with grated cheese.
