Pasta Salad By Basim Akhund

Ingredients:

  • Pasta                                                   175 gm
  • Green pepper (deseeded)                   1
  • Courgettes (sliced)                              2
  • Onion                                                  1
  • Tomatoes                                            125 gm
  • Salt                                                      to taste
  • Ingredient for Dressing:
  • Oil                                                       4 tbsp
  • Vinegar                                               2 tbsp
  • Lemon juice                                        2 tsp
  • Mustard                                              1 tsp
  • Sugar                                                   ½ tsp
  • Salt                                                      to taste
  • Black pepper                                       to taste

 

Method:

  1. Cook the pasta in a large pan of lightly salted boiling water. for 8-10 minutes.
  2. Meanwhile, place the pepper skin side up, under a preheated grill until they just begin to char.
  3. Remove with tong, place in a plastic bag and tie the top when cool enough to handle.
  4. Peel the skin and slice into strips.
  5. cook the courgettes in a small amount of lightly salted boiling water for 3-4 minutes. drain and refresh until cold running water to cool
  6. To make the dressing, mix together the oil, vinegar, lemon juice, mustard sauce and sugar. season well with salt and pepper to taste.
  7. Drain pasta well and tip it into a bowl. add the dressing, pepper strips, courgettes, onion and tomatoes set aside for 10 minutes or longer then serve.
