Ingredients:
- Pasta 175 gm
- Green pepper (deseeded) 1
- Courgettes (sliced) 2
- Onion 1
- Tomatoes 125 gm
- Salt to taste
- Ingredient for Dressing:
- Oil 4 tbsp
- Vinegar 2 tbsp
- Lemon juice 2 tsp
- Mustard 1 tsp
- Sugar ½ tsp
- Salt to taste
- Black pepper to taste
Method:
- Cook the pasta in a large pan of lightly salted boiling water. for 8-10 minutes.
- Meanwhile, place the pepper skin side up, under a preheated grill until they just begin to char.
- Remove with tong, place in a plastic bag and tie the top when cool enough to handle.
- Peel the skin and slice into strips.
- cook the courgettes in a small amount of lightly salted boiling water for 3-4 minutes. drain and refresh until cold running water to cool
- To make the dressing, mix together the oil, vinegar, lemon juice, mustard sauce and sugar. season well with salt and pepper to taste.
- Drain pasta well and tip it into a bowl. add the dressing, pepper strips, courgettes, onion and tomatoes set aside for 10 minutes or longer then serve.
