Ingredients for Chocolate Sponge Base:
Eggs 2
Sugar 2 oz
Flour 1 ½ oz
Cocoa 1 ½ oz
Vanilla Essence ½ tsp
Fillings:
Cream Cheese 5 oz
White Chocolate 4-5 oz
Orange Juice 3 oz
Gelatin 1 ½-2 tbsp
Cream 1 cup
Egg Whites 2
Caster Sugar 5 tbsp
For Topping:
Orange Jelly 1 packet
Oranges as required
Peaches as required
Method:
Beat eggs, sugar and in sieved flour with cream, beat and add vanilla essence, 1 tbsp water and bake on 200 degree.
Method for filling:
Melt chocolate over hot water, beat cream cheese and sugar, then mix the chocolate. Heat orange juice and melt the gelatin in it. Stiff egg whites and fold in to the mixture Stiff the cream and fold it and mix.
To assemble.
In a 8-9 inch pan, place the sponge on it, spread the filling on the sponge, keep it for 2 hours, then spread the topping of orange jelly or put the orange and peaches and spread gelatin glaze.
