Peanut Pasta Salad Recipe by Shireen Anwar

Ingredients:

  • Peanut Butter half cup
  • Soya sauce 2 tbsp
  • Vinegar 2 tbsp
  • Sriracha sauce 2 tbsp
  • Water Quarter cup
  • Sesame oil 1 tbsp
  • Ginger (finely chopped) 1 tbsp
  • Garlic (finely chopped) 1 tsp
  • Brown sugar 2 tbsp
  • Carrot (julienned) 1
  • Cucumbers (julienned) 2
  • Capsicum (julienned) 1
  • Onion (sliced) half cup
  • Coriander leave chopped 2 tbsp
  • Peanuts chopped quarter cup
  • Rice noodles half packet
  • Suree salad dressing half cup

 

Method:

  1. Boil water soak rice noodles for 30 min drain.
  2. In a medium bowl beat peanut butter soya sauce vinegar, sesame oil syrasha sauce, water, salad dressing brown sugar and ginger garlic mix all together.
  3. Combine pasta with all vegetables pour the dressing over pasta and vegetable
  4. mix well chill for 1 hour before serving garnish with chopped coriander and peanut.
