Potli Pulao

Ingredients for Potli:

  • Fennel seeds                        3 tbsp
  • Whole coriander seeds 4 tbsp
  • Mutton                                  1 kg
  • Water                                                8 cups
  • Onion                                                2
  • Ginger sliced                        2 tbsp
  • Black pepper                       20 + 4
  • Cloves                                    10 + 4
  • Cinnamon                             2 + 1 sticks
  • White cumin seeds            1 tbsp
  • Black cardamom                2 + 2
  • Green cardamom               4
  • Garlic                                     1 pod
  • Oil                                           ¾ cup
  • Ginger garlic 1 tsp heaped
  • Chili powder 1 tsp heaped
  • Green chili 10 grinded into a paste
  • Brown onion 1 cup
  • Salt 1 tbsp
  • Yogurt 1 cup
  • Potatoes 4 cut into cubes and half boiled
  • Rice 750 gm

 

Method:

  1. Make a potli with saunf, whole coriander seeds, whole spices
  2. Add white cumin seeds and 1 garlic pod and ginger slices
  3. Put mutton in a pan with water, onion slice and prepared potli
  4. Cover and cook till mutton tender and 4 cups stock left.
  5. Heat oil in a large pan
  6. Add whole spice, ginger garlic paste, fry for 2 mins
  7. Add in the spices, brown onion with boiled mutton, potatoes, yogurt, cover and cook for 10 mins
  8. Add the remaining stock when boiling, add the soaked rice
  9. Cook on full flame for 10 mins, lower flame and cook for 15 mins on dum till done.
