Rattan Kaliya
Ingredients
Mutton ½ kg
Yogurt 1 cup
Allspice 1 tsp
Chili powder 2 tsp heaped
Coriander powder 2 tsp heaped
Turmeric ½ tsp heaped
Ginger garlic 2 tbsp
Mutton paya 4
Saffron ½ tsp
Salt 2 tsp
Coriander leaves chopped 2 tbsp
Green chilies chopped 2
Onion 1 sliced
Salt 1tsp
Method
Boil mutton paye with 1 tsp salt, onion, turmeric, ginger garlic 1 tbsp and 1 tsp salt till tender, keep aside, heat half cup oil add 1 tbsp ginger garlic with mutton and all the dry seasonings, fry well add mutton with yogurt, cover and cook till mutton half done, add paye with stock, cook on slow flame till both done and thick gravy left, sprinkle all spice, chopped hara masala and saffron, serve with nan.
