Rice Noodle Salad by Shireen Anwar

Ingredients:

  • Rice Noodles (Soaked) 1 pkt
  • Garlic (Crushed) 1 tsp
  • Brown Sugar 1 tbsp
  • Vinegar 2 tbsp
  • Light Soy Sauce 1 tbsp
  • Hoisin Sauce 3 tbsp
  • Sambal Oelek 1 tbsp
  • Salt 1 tsp
  • Spring Onion (Chopped) ½ cup
  • Carrot (Julienned) 1
  • Peanuts (Roasted) ½ cup
  • Capsicum (Julienned) 1
  • Sweet Corn ½ cup
  • Oil 2 tbsp
  • Coriander Leaves (Chopped) 2 tbsp
  • Mint Leaves (Chopped) 2 tbsp
  • Grilled Chicken (Shredded) 1 kg
  • Black Pepper (Crushed) To taste

 

Method:

  1. Heat oil in a pan, and fry the crushed garlic.
  2. Add grilled chicken with brown sugar, vinegar, salt, soy sauce hoisin sauce, crushed black pepper and remove from heat.
  3. Fold in soaked rice noodles with carrot, capsicum, spring, onion, roasted peanuts.
  4. Mix well and serve.
