Roghni Qorma

Ingredients:

  • Mutton                ½  Kg
  • Yogurt   1 cup
  • Red Degi Chili     2
  • Chopped Onions              3
  • Khewra                                few Drops
  • Chopped Coriander        2 tbsp
  • Ginger Paste      2 tbsp
  • Rogan Josh Masala          2 tbsp
  • Salt                         to taste
  • Small Cardamom              6
  • Black Cumin        1 tsp
  • Chopped Almonds          10
  • Clarified Butter 1 cup

Method:

  1. Boil 2 red degi chilies with few drops of vinegar and water.
  2. Take some clarified butter in pan and fry onion till golden brown.
  3. Mix together yogurt and brown onion.
  4. Add on small cardamom, 1 tsp black cumin and red chilies and blend together.
  5. Cook together, mutton, grinded powder, chopped coriander, rogan josh Masala, ginger and some salt. Cover it and cook.
  6. When the water dries add in water.
  7. Add in few drops and keep for 10 minutes.
