SABIZION KI BIRYANI by Zubaida Tariq in Handi

 

Ingredients:
Peas    1 cup
Oil    1 cup
Yogurt    ½ cup
Fresh milk    ½ cup
Rice    2 ½ cup
Chopped mint leaves    1 bunch
Cauliflower    1
Carrots    2
Green chilies    2
Tomatoes    2
Chopped onion    4
Potatoes    4
Small cardamom    6
 Lemons    6
Green beans    10
All spices    few
Yellow food color    as required
Ginger garlic paste    1 tbsp
Butter    1 tbsp
Salt    to taste    

Method:
Boil rice along with green chilies, mint leaves; all spice powder, small cardamom, 1 tbsp white vinegar and some salt. Drain the water. In a pa, take some oil and fry onion till they are golden brown. Take out half of it. In the remaining half, add in ½ cup yogurt, 1 tbsp ginger garlic paste, all spice powder, cardamom and tomatoes. When the tomatoes are cooked add in potatoes. In a separate pan, saute in cauliflower, carrots, peas. Add in lemon juice and mint leaves. Cook it for 5 minutes. Grease a pan, and layer the rice in the bottom of the pan. Then layer the vegetable mixture. Layer the rice again. In ½ cup milk dissolve food color and add it on it. Add in lemon juice. Simmer it and serve hot.
