Ingredients:
- Dry fettuccine 1 pound
- Olive oil 3 tbsp
- Sliced onion 1
- Garlic 2-3 cloves
- Sausages 4
- Quartered tomatoes 2
- Cherry tomatoes a few
- Vinegar 2 tbsp
- Salt 3/4 tsp
- Black pepper 1/4 tsp
- Fresh basil leaves 1/2 cup
- Grated parmesan 1/4 cup
Method:
- Cook the pasta in hot salty water till al dente about 7-10 minutes.
- Drain and set aside.
- Meanwhile, heat oil.
- Add the onion and garlic and cook until the onion softens.
- Add the sausage and cook.
- Add the tomatoes and cook.
- Stir in the vinegar, salt, and pepper.
- Add the cooked pasta, basil and toss gently to combine.
- Serve in bowls and top with the Parmesan.
