Sausage and Tomato Pasta by Zarnak Sidhwa

Ingredients:

  • Dry fettuccine 1 pound
  • Olive oil 3 tbsp
  • Sliced onion 1
  • Garlic 2-3 cloves
  • Sausages 4
  • Quartered tomatoes 2
  • Cherry tomatoes a few
  • Vinegar 2 tbsp
  • Salt 3/4 tsp
  • Black pepper 1/4 tsp
  • Fresh basil leaves 1/2 cup
  • Grated parmesan 1/4 cup

 

Method:

  1. Cook the pasta in hot salty water till al dente about 7-10 minutes.
  2. Drain and set aside.
  3. Meanwhile, heat oil.
  4. Add the onion and garlic and cook until the onion softens.
  5. Add the sausage and cook.
  6. Add the tomatoes and cook.
  7. Stir in the vinegar, salt, and pepper.
  8. Add the cooked pasta, basil and toss gently to combine.
  9. Serve in bowls and top with the Parmesan.
