Seh Rangi Jamun Zarda by Chef Gulzar in Dawat

 

Ingredients
Sela Rice                                     250 grams
Sugar                                     ½ cup
Green Cardamoms                             4-5
Khoya                                     ½ cup
Dry Fruits                                 ½ cup
Yellow Food Color                             1 pinch
 Green Color                                 1 pinch
Yellow Color                                 1 pinch
Mini Gulab Jamun                             4-6
Screw Pine Essence                         few drops
Silver Leaf                                 as required
Clarified Butter                             1 cup

Method  
Take 250 grams of sela rice wash it off and soak it 2-3 hours and then add few drops of screw pine essence and hard boil it. take a cooking pan add 1ccp of clarified butter, add 4-5 green cardamoms, add as required water, ½ cup of sugar mix it well when it dissolve, add ½ cup of yellow food color, and add ½ cup of khoya mix it well. Now separate the rice in a three bowls add 1 pinch of green food color, 1 pinch of yellow food color, 1 pinch of yellow color mix it well and add ½ cup of dry fruits, then mix it well and steam the rice when it’s done take it out in as serving platter garnish with mini gulab jamun, sliver leaf and serve it.
