Shahi Subzi Karhi
Ingredients:
Yogurt 1 cup
Coriander Leaves (finely chopped) 1 bunch
Carrots (chopped) 2
Spring Onions 2
Potatoes 2
Green Chilies 6
Curry Leaves 6
Peas (peeled) 1 cup
Broad Beans (finely chopped) ½ cup
Cauliflower (small) 1 flower
Turmeric 1 tsp
Ginger Garlic Paste 1 tbsp
White Vinegar 2 tbsp
Gram Flour 3 tbsp
Red Chili Powder ½ tbsp
Salt as required
For baghar:
Oil 1 cup
Garlic 3 cloves
Fenugreek Seeds 6
Curry Leaves 6
Button Red Chilies 8
Coriander (roasted) 1 tsp
White Vinegar 1 tsp
Method:
• Beat tpgether 1 cup gram flour with yogurt. Add in 1 tbsp ginger garlic paste, ½ tbsp red chili powder, 1 tsp turmeric ad 4 cup water. Pour the content using sieve in a pan and leave it to boil.
• Brush the corners of the pan with oil or clarified butter, so that the curry does not overflow from the pan.
• When the curry reaches boil, add 6 curry leaves, 6 green chilies and 2 tbsp white vinegar.
• As the mixture boils well add salt and stir it with wooden spoon.
