Smoked Chicken Mandi

Ingredients:

  • Chicken (2 pieces)           1
  • Mandi masala                    4 tbsp
  • Yogurt                                   ½ cup
  • Clarified butter                 4 tbsp
  • Onion                                    1
  • Whole garlic                       1
  • Tomatoes                            2
  • Ingredients for mandi masala:
  • Whole coriander              2 tbsp
  • White cumin                      1 tbsp
  • Black pepper                      15-16
  • Cloves                                   10-12
  • Cinnamon                           1 piece
  • Turmeric                              ½ tsp
  • Salt                                         to taste
  • Ingredients for rice:
  • Basmati rice                        750 gram
  • Chopped onion                 1
  • Mandi masala                    2 tbsp
  • Clarified butter                 ¾ cup
  • Whole dry lemon             2-3
  • Saffron                                 as required
  • Boiled eggs                         for garnish

Method:

  1. Saute whole ingredients of mandi masala and grind them with powdered spices.
  2. Now cut chicken in half.
  3. Mix mandi masala in yogurt.
  4. Heat clarified butter and fry chicken in it.
  5. Then add onion, whole garlic and tomatoes then saute it.
  6. Now add water to tender chicken and strain stock.
  7. Fry chicken pieces in 2 tbsp clarified butter.
  8. Heat clarified butter and fry onion in it and adds mandi masala.
  9. Add stock with lemon and boil for 10 minutes.
  10. Now add rice and salt to taste.
  11. Cook until simmer. Give coal smoke on chicken fried pieces.
  12. Take out rice in a dish and put chicken pieces and boiled eggs on it.
