Subzi ki Biryani

Ingredients:

  • Boiled Mix Vegetables 500 Grams
  • Sela Rice 300 grams
  • Tomatoes (Sliced) 2
  • Fried Onion 2-3
  • Ginger Garlic Paste 1 tsp
  • Coriander Powder 1 tbsp
  • Red Chili Powder 1 tsp
  • Turmeric Powder 1 tsp
  • All Spice Powder ½ tsp
  • Cumin Seeds ½ tsp
  • Cloves 2-3
  • Cinnamon 1-2 sticks
  • Bay Leaves 1-2
  • Black Cardamoms 2-3
  • Green Cardamoms 2-3
  • Yogurt ½ cup
  • Finely Chopped Coriander ½ bunch
  • Finely Chopped Mint Leaves ½ bunch
  • Finely Chopped Green Chilies 4-5
  • Screw Pine Essence few drops
  • Clarified Butter ½ cup
  • Salt to taste

Method:

  1.  For rice: Take a cooking pan add 1-2 bay leaves add 300 grams of basmati rice and to taste salt and boil
  2. Now strain the the rice and set aside.
  3. For korma : take a cooking pan add ½ cup of clarified butter
  4. Add 1-2 sticks of cinnamon, 2-3 cloves , black cardamoms, 2-3 green cardamoms
  5. Add ½ tsp of cumin seeds when its popping add 2 chopped tomatoes , 1 tsp of ginger garlic paste
  6. Add 2-3 fried onions and add ½ kg of mixed boiled vegetables mix it well
  7. When tomatoes are soften, take ½ cup of yogurt add 1 tsp of red chili powder, 1 tbsp of coriander powder , 1 tsp turmeric powder , ½ tsp of whole spice powder
  8. Add to taste salt and mix it well and add into the vegetables mixture when the vegetables are tender are mix it well take it out in a bowl.
  9. For Layering: Take a cooking pan add korma
  10. Now add boiled rice add 4-5 finely chopped green chilies,1/2 bunch of coriander finely chopped
  11. Add ½ bunch of mint leave finely chopped now spread all the remaining rice.
  12. At last add few drops of screw pine essence, rest of the fried onion and steam the rice, when the steam is done.
  13. Take it out in a serving platter and serve it hot.
