Thai Chicken Pasta Salad by Zarnak Sidhwa in Food Diaries

Ingredients:      
2 Roasted Chicken Breasts Chopped         
2 cups Boiled Spiral Pasta    
3/4 cup Creamy Peanut Butter    
3/4 cup Coconut Milk    
1/4 cup Chopped Coriander    
1/4 cup Lemon Juice    
1 tbsp  Sugar    
3/4 tspSalt    
1/4 tsp Cayenne Pepper    
1 Cucumber   Sliced    
6 Spring Onions Thinly Sliced

Method :
bring water to boiling point add in salt and oil and add the spiral pasta drain once done and oil so they don’t stick. Meanwhile, in a bowl whisk together peanut butter, coconut milk, coriander, lemon juice, sugar, salt, and cayenne pepper until smooth. Add chicken, cucumber, and spring onions to peanut butter mixture; stir to coat. In a bowl combine chicken mixture and pasta  toss to combine. Serve chilled.
