Turmeric Lemon Rice

Ingredients:

  • 2 tbsp       Cashews/  peanuts, toasted
  • 1       Coriander Leaves
  • 2 tbsp Lemon juice
  • 1 1/2 cups Rice, cooked
  • 1/2 tsp Mustard seeds
  • 1/3 tsp Red pepper flakes
  • 1/2 tsp Turmeric
  • 1 tsp Oil
  • 8                   Curry Leaves

Method:

  1. Cook the rice and keep aside or let the rice.
  2. Heat oil in a skillet over medium heat.
  3. When the oil is hot, add mustard seeds and let them start to pop.
  4. Add curry leaves and wait for a few seconds.
  5. Add turmeric and mix in. Reduce heat to medium low.
  6. Add nuts and mix all well.
  7. Add in the rice and mix in well. Add salt if the cooked rice was not salted. Cook for 2 mins. Taste
  8. Adjust salt and lemon.
  9. Cover and take off heat. Let it sit for 2 mins before serving.
  10. Garnish with Coriander Leaves
