VEGETABLE LASAGNA Recipe by Rida Aftab in Tarka

Ingredients:
Boiled Lasagna Sheet                                                               1 packet
Carrots                                                                                        1 cup
Capsicums                                                                            1 cup
Sweet Corns                                                                                 1 cup
 Tomatoes (chopped)                                              1 cup
Cream                                                                  ½ cup
Garlic (chopped)                                                              2 tsp
Lemon Juice                                                   2 tsp
Black Pepper                                                      1 tsp
Salt                                                                  ½ tsp
Basil Leaves                        6
Oregano                                                                    1 tsp
Red Chilies (Crushed)                                                               1 tsp
Oil                                                                  2 tbsp
Butter                                                                  50 gms
Cheddar Cheese                                                                   1 cup
Mozzarella Cheese                                                                1 cup
Tomato Ketchup                                                                  1 cup

METHOD:
•    In a pan heat  oil. To it  add chopped garlic and fry.
•    Now add  carrots, capcicum ,  sweet corn,  chopped tomatoes, salt,  black pepper,  oregano and  red chillies crushed
•    . Along with this  add of water, cover and let it simmer.
•    When the vegetables become  tender, drain the water .Add  tomato ketchup and turn off the stove.
•    Then grease a tray and layer first the lasagna sheets, prepared vegetables,cream, cheddar cheese and mozzarella cheese repeat this process .
•      Sprinkle with the remaining vegetables and cheese. Bake the lasagna in a oven at 180c for 20 minutes. Dish out, sprinkle with basil leaves and serve.
