Vegetable Pulao Recipe by Zarnak Sidhwa in Food Diaries

Ingredients:
1 cup Rice
2 small Egg Plants diced
1 Potato diced
1 Carrot diced
1 Green Capsicum diced
1 Onion chopped
1/2 tsp Turmeric Powder
1 tsp Coriander Powder
1 tsp Mustard Seeds
Salt to taste
Ghee+oil
Spice Mix:
1 tspĀ  Bengal Gram
1 tsp Cumin Seeds
2 Cloves
1/4 tsp Fenugreek Seeds
1/2 tsp Fennel Seeds
2 Green Chilies
1 small piece Ginger

Method:
Cook earlier soaked rice with just enough water so that the grains remain separate.Dry roast all the ingredients in the spice mix except green chillies and ginger.Once cool grind to a coarse paste along with ginger and green chillies. heat oil and temper with mustard seeds.Next add the spice paste and saute till the raw smell goes off. Add the onions and fry till golden brown.Add all the vegetables and saute for just about 5-7 minutes.The vegetables should still retain their crunch Add salt and turmeric powder to the veggies and saute for 2 more minutes. Add the rice gently and spread over the vegetables.Do not mix now.Next add two teaspoons of ghee and coriander powder.Cover tightly and let simmer. After 10 minutes mix gently add lemon juice and serve warm with raita
