Zam Zam Pulao Recipe:

Ingredients:

For Mutton Balls

  • Mutton Mince (With 50 Grams Of Fat)                 ½ kg
  • Onion                                         2
  • Eggs                                         2
  • Bread Slices                                     2
  • Garlic (Chopped)                                 1 tbsp
  • Red Chili Powder                                 1 tbsp
  • Cumin Powder                                 1 tsp
  • Crushed Black Pepper                             1 tsp
  • Baking Powder                                 ½ tsp
  • Oil                                 for deep  Fry
  • Salt                                             to taste
  • For Pulao
  • Mix Vegetables                                ½ kg
  • Sela Rice                                        ½ kg
  • Ginger Garlic Paste                                 2 tbsp
  • Cinnamon                                 1-2 sticks
  • Cloves                                     2-3
  • Black Cardamom                             2-3
  • Onion                                     1
  • Crushed Black Pepper                         ½ tsp
  • Mutton Stock                                 1 jug
  • Mint Leaves                                 1 bunch
  • Green Chilies                                 4-5
  • Cottage Cheese (Cubes)                         1 cup
  • Clarified Butter                             4-5 tbsp
  • Salt                                         to taste

Method:

For mutton balls: Take ½ kg of mutton mince (with 50 grams of fat), 2 onions, 2eggs, 2bread slices, 1 tbsp of chopped garlic , 1 tbsp of red chili powder, 1 tsp of cumin powder, 1 tsp of crushed black pepper , ½ tsp of baking powder and to taste salt mix it well in the grinder and make the balls and deep fry it. For Rice: Take ½ kg of sela rice wash it off and soaked it for 2 hours. Now take a cooking pan add 1-2 sticks of cinnamon, 2-3 black cardamom , 2-3 cloves and when its popping add 1 onion, 2 tbsp of ginger garlic paste and roasted. Now take ½ kg of mixed vegetables, ½ tsp of crushed black pepper and to taste salt. Add ½ kg of soaked sela rice and 1 jug of mutton stock cook until the ric is done and add mutton balls then steam the rice when the steam is done. Take 1 cup of cottage cheese cubes slightly fry in some oil and add it to the top of it take it out in a serving platter and garnish with 1 bunch of mint leaves and 4-5 green chilies and serve it.
